White miso, also known as shiro miso (白味噌) or saikyo-miso (西京味噌), is a culinary treasure from Kyoto, in the Kansai region of Japan. Its texture is deliciously creamy, and its sweetness subtly caresses the palate. Rich in rice, it contains twice as much rice koji as legumes, giving it a delicately sweet flavor and is low in salt (4%). Its exquisite and delicate taste makes it the perfect base for refined dishes, adding an elegant sweetness that enhances the flavors of your culinary creations. Shiro miso is the richest in carbohydrates and the least in salt and protein, offering a light and flavorful alternative for your cooking.
