For our organic sweet red miso with chickpeas, we follow the traditional Japanese recipe of “Edo (江戸, former name for Tokyo) ama miso (甘, sweet miso)”. This rice-based red miso, prepared with chickpeas instead of soybeans, offers a harmonious and rich flavor profile: mild and low in salt (6%). Its taste is surprising: both balanced and intense. Uses: Thanks to its low salt content, this miso is particularly versatile and adapts to all cooking techniques: marinades, spreads, grilled fish, meats and vegetables. A key ingredient in gourmet and creative cuisine, it adds a sophisticated touch to sauces, broths and even desserts.
