For our organic Mild Red Chickpea Miso, we follow the traditional Japanese recipe for Edo (江戸, old Tokyo) ama miso (甘味噌, sweet miso).
This rice-based red miso, made with chickpeas instead of soy, offers a rich and harmonious flavor profile: naturally sweet and low in salt (6%).
Its taste is surprising — both balanced and expressive.

Uses:

Thanks to its low salt content, this miso is particularly versatile and adapts to all cooking techniques:
marinades, spreads, grilled fish, meats, and vegetables.
A key ingredient for creative, gourmet cooking, it adds a refined touch to sauces, broths, and even desserts.

Our organic mild red chickpea miso pairs beautifully with spices, which is why we offer two delicious “ready-to-use” blends made from this base.

Storage: Store in a cool, dry place.
