A mild, smooth and surprising miso, made from organic walnut cake from nOk.

This unique miso was born from a beautiful circular collaboration with nOk – the organic walnut and all its senses

We recover their nut cake, resulting from the pressing of the oil, to give it a new life — and give birth to a miso of unprecedented aromatic richness.
Slowly fermented with our homemade rice koji, it develops a roasted nut aroma, a natural sweetness, and a light saltiness (6%), while remaining 100% plant-based. An ideal winter condiment, both comforting and refined.

How do I use it?

  • In a seasonal soup (pumpkin, leek, parsnip…) for a round and umami touch.

  • Spread on bread or crackers, with cheese or grilled vegetables.

  • As a sauce base to enhance your hot dishes, cereals or purees.

  • And even in desserts! In cookies , pudding or chocolate mousse , to bring that little umami “punch” that enhances and balances the sweet flavors.
